Aseptic packaging is an advanced preservation technique that allows products such as purees, diced peppers, or cooked onions to remain in perfect condition without refrigeration.
Here's how it works and why it's so relevant for companies like Tala Foods or Agro Ingredients:
1. What does the process involve?
Unlike traditional canning, in the aseptic system the product and the packaging are sterilized separately:
Product sterilization: The food is subjected to an ultra-fast heat treatment (UHT) that eliminates microorganisms and spores without destroying the flavor or nutrients.
Sterilization of the container: The container (usually high barrier multilayer bags) is disinfected before filling.
Filled in a sterile atmosphere: Both are joined in a sealed, bacteria-free chamber to prevent any recontamination.
2. Advantages for the food industry
This method offers strategic benefits for manufacturers who purchase plant-based ingredients on a large scale:
Room temperature storage: Products can be stored in conventional warehouses for up to 12 or 24 months, drastically reducing refrigeration energy costs.
Quality preservation: Because it is a short thermal process, the color, texture and aroma of the vegetable (like the roasted pepper we saw) are preserved much better than in a long canning process.
Safety and cleanliness: The product arrives "ready to use", with full microbiological guarantees and no risk of oxidation.
Industrial formats: 200 kg drums or 1,000 kg containers (IBCH) are commonly used, ideal for continuous production lines.
3. Sustainability and Efficiency
Aseptic packaging is key to global exports. It allows tons of onion puree or diced peppers to be shipped from one continent to another on conventional ships, without relying on refrigerated containers, thus optimizing logistics and reducing the carbon footprint of transportation.
